No need for take-out! Tonight’s foodie Friday dinner recipe is an exceptional and easy chicken fried rice dish. This recipe is great for large family dinners because you will have extra.
- Cooked rice
- 2 chicken breasts – cut thin
- 1 chopped onion
- 1 tbsp. minced garlic
- 1 1/2 cups of frozen mixed veges (variety type)
- Dried chicken broth flavoring
- Soy Sauce
- Eggs (2-3)
Sauté onions and garlic until brown, then add in eggs. Scramble eggs in pan until extremely small. In separate pan, season (salt, pepper, garlic powder) and sauté chicken until lightly browned. In a 3rd pan, preferably and wok or large pan, combine cooked chicken and eggs. Add in salt, sugar, and chicken flavoring to taste. Heat to medium and then add in rice and thawed vegetables. Add in appropriate amount of soy sauce that is preferred.
Mix through and cook until rice is browned. Taste for flavor, if too salty add in sugar or if too sweet add more soy sauce.
