Dinner: Pepperoni Quesadilla Pizza

I love to scroll Pinterest and check out all the amazing food. But if you’re like me, you may not always have the time to prepare such extravagant meals. To me, Foodie Friday means skipping out on the expensive restaurant bill and making something quick and delicious to enjoy at home. What could be better than pizza and a movie on Friday night? During my daily scroll on Pinterest, I found an easy pizza recipe that the whole family will enjoy. Check it out!
Dinner Ingredients: ● Olive oil spray ● Tortillas ● Pizza sauce ● Mozzarella cheese ● Pepperoni ● *Onion ● *Mushrooms ● *Green pepper
Start by setting the oven to 350◦. Set a sizeable sheet of aluminum foil on a baking sheet and set aside. This will be used to bake the pizzas. Spray one side of the tortilla with an even coating of olive oil and face the coated side flat on the baking sheet. Repeat for the amount of pizzas you wish to make. Apply a thin layer of sauce and top with cheese and pepperoni. In a skillet, sauté onions, mushrooms, and green pepper. Once the toppings are sautéed, add them evenly to each pizza. Top with a pinch more mozzarella and fold in half. Place the folded pizzas in the oven for about 10 minutes; or until cheese is melted and tortilla is crispy. Pair with your favorite glass of wine and enjoy! Original Recipe
Dessert Ingredients: ● Cake mix ( and ingredients on back of cake mix) ● ½ teaspoon pumpkin pie spice ● ½ teaspoon cinnamon ● 1 can of pumpkin puree ● Canned cream cheese frosting ● *Brach’s® candied pumpkins
Preheat oven to 350◦. In a large mixing bowl, combine cake mix as directed however, substitute water for puree. Pour cake batter into cupcake liners in a muffin pan and bake 17-20 minutes. Take out and place on cooling rack. While cupcakes are cooling, mix cinnamon in the canned frosting. When cupcakes are completely cooled, frost and place candied pumpkins. Original Recipe
