It’s Foodie Friday! For tonight’s recipe, why not breakfast for dinner? We are making Pumpkin French Toast – a delightful treat for the season. For my sides, I made sunny side up eggs and brown maple sausage links. It is so simple and very delicious! Feel free to do up your sides anyway you and your family like.
Ingredients: 4 eggs ● ¼ canned pumpkin puree ● 1 tsp. ground cinnamon ● sliced white or wheat bread ● 2 tsp. butter ● fruit* ● Powdered sugar*
Beat eggs, puree, and cinnamon together in a medium mixing bowl. Cut bread into strips and dip into the mix, coating each side. Melt 1 tsp. of butter in skillet over medium heat. Place 4 bread slices in skillet and cook until brown on each side. Give about 3 – 4 minutes per side. Repeat with remaining bread and butter. Add fruit and powdered sugar if desired. Drizzle maple syrup and enjoy!
