Pinterest Find: One-Pot Dinner Recipe

We all know that dinner can be a grueling process after a long day. Meals that have a long preparation time can be a headache! I found this dinner recipe as I was scrolling through Pinterest and it looked like a great dish to try. Preparation was easy and the whole meal (dessert included) took 15 minutes. Not too bad, huh? This was a delicious and simple meal that I would recommend to anyone. The best part is you can make it your own – that’s what I did!

Dinner: One-Pot Pasta with sautéed Italian chicken

Dessert: Vanilla pudding with whipped cream

 Dinner Ingredients:  ● 1 ½ cups of peas ● 2 (8 oz.) cartons of mushrooms ● 16 oz. thin spaghetti ● 5 cups of water ●2 tablespoons of olive oil (or canola oil) ● Thyme (leaves or 3 fresh sprigs) ● Salt & Pepper ● Half a lemon ● ½ cup of heavy cream ● Grated Parmesan ● Boneless, skinless chicken breasts ● McCormick® Italian seasoning ● *Bacon bits ● *Red pepper flakes

Dessert Ingredients: ● Jell-O® instant vanilla pudding (or your favorite) ● 2 ½ cups of milk ● Whipped cream

Directions: In a large pot add water, pasta, peas, mushrooms, olive oil, thyme, and lemon juice; season with salt and pepper. Bring the pot to a boil over high heat, and then reduce to medium frequently turning the pasta. Cook for about 10 minutes until the pasta is al dente and water is mostly evaporated. (If you do need to drain, use the lid and pour out excess water over the sink – no use in dirtying more dishes!) Remove thyme sprigs and add the cream. Keep heat on low – adding salt and pepper to taste. Sprinkle with Parmesan.*If desired, add bacon bits and red pepper flakes

While your dish is boiling, season your chicken. I like to use McCormick® Italian seasoning – you can use your favorite! After you have seasoned your chicken, add 2 teaspoons of olive oil to your skillet to keep the chicken juicy. Keep on high heat for 3 minutes, and then reduce to medium heat. Continue to flip until no longer pink and a brown, even coating appears. This usually takes 8-10 minutes.

While your dishes are cooking, add the milk and instant pudding into a bowl. Mix with a whisk for about 5 minutes until it thickens. Cover with plastic wrap and place it in the fridge to set. When you are done, spoon pudding into cups and add the whip topping. Easy dinner and dessert for you and the family! Enjoy with your favorite glass of wine and toast to a job well done!
